Sweet Potato Hash


I like to make this dish when I have left over cooked beef or poultry. However, it makes a beautifully blended vegetable side dish without these additions. As always, use the freshest ingredients to prepared the best hash.
1 large sweet potato, peeled and diced, about 2 cups
2 large baking potatoes, peeled and diced, about 3 cups
1/2 pound bacon, diced, about 8 to 10 slices
1 medium onion, diced, about 1 cup
1 green bell pepper, diced, about 1 cup
1 tablespoon fresh rosemary, chopped
salt and freshly ground pepper

1 cup cooked turkey, diced, (optional)

HELPFUL HINT: The secret to this dish is preparing all of the ingredients into a similar sized dice.

  1. Blanch the sweet potatoes for 5 minutes. Drain and set aside.
  2. Blanch the white potatoes for 7 minutes. Drain and set aside.
  3. Cook the diced bacon until crisp. Transfer the pieces to a bowl with a slotted spoon and set aside.
  4. Cook the onion and green pepper in the bacon fat until browned.
  5. Add the potatoes to the pan and brown well.
  6. Add the bacon back to the pan and stir.
  7. Season with the fresh rosemary, salt and freshly ground pepper.
HELPFUL HINT: To make the hash a simple main dish, add cooked meat or poultry such as diced cooked turkey, ham, beef or chicken to the pan. Warm the hash by placing the contents of the into a baking dish that has been sprayed with a vegetable cooking spray. Bake at 325 for 20 minutes or until ready to serve.
