Jorj's Double Chocolate Chip Oatmeal Cookies


Here is a fun variation on the standard chocolate chip cookie. The white chocolate chips and hint of cinnamon add an interesting twist. I like to blend margarine and butter for a chewier cookie.

2 1/2 cups flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon cinnamon
1 stick margarine, room temperature, 1/2 cup
1 stick unsalted butter, room temperature, 1/2 cup
1 cup brown sugar, packed
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
3/4 cup old fashioned rolled oats
3/4 cup semisweet chocolate chips
3/4 cup white chocolate chips

Preheat the oven to 350 degrees. Lightly spray a large baking sheet with vegetable cooking spray.

1. Combine the dry ingredients (flour, baking soda, salt and cinnamon) and set aside.

2. Use an electric mixer to blend together the margarine and butter until the mixture is creamy.

3. Stir in both sugars to the butter mixture and blend well.

4. Add the eggs one at a time.

5. Stir in the vanilla.

6. Add in the flour mixture in three parts, scraping down the bowl after each addition.

7. Stir in the oatmeal and both the white and dark chocolate chips using the slow speed.

8. Drop the cookie batter by rounded teaspoons onto the prepared baking sheet. Bake for 10 minutes or until slightly browned and firm to the touch. Cool on baking racks for several minutes.

Yield: 5 Dozen Cookies
