Tuna Sauce


This is a very sturdy sauce that blends the interesting flavors of tuna, capers and lemon. It is the perfect accompaniment for a vegetable party platter and can be equally exciting when drizzled on cooked chilled breast of chicken or turkey.
1 (7 3/4 ounce) can tuna packed in olive oil
1 (7 ounce) can anchovy fillets
3 to 4 tablespoons capers, drained
1/2 cup olive oil
juice of 1 medium lemon about 2 to 3 tablespoons
1 1/2 cups mayonnaise
salt and freshly ground pepper

parsley, chopped, optional
1 lemon, sliced, optional

1. Combine the tuna, anchovies and capers in a food processor. Pulse until smooth.

2. Add the olive oil through the feed tube with the motor running.

3. Add the lemon juice and pulse briefly.

3. Pour the mixture into a medium size bowl.

4. Fold in the mayonnaise.

5. Season with salt and freshly ground pepper.

SETTING THE SCENE: Serve the sauce over chilled chicken or turkey slices. Garnish the dish with fresh chopped parsley and lemon slices.
