Food Storage

Q:UGH! When I tried to make my son a sandwich for his lunchbox, the turkey that I bought during this week's shopping had a greenish tinge. Aren't cold cuts supposed to last at least a week in the refrigerator?

A: Nothing lasts forever - especially cold cuts. Many foods are treated with chemical preservatives that are designed to extend their shelf life. But fresh foods that do not contain these chemicals last a much shorter amount of time. Proper sealing of the food is also extremely important. Once opened, a package of hot dogs will last several days in the refrigerator as long as they are resealed in an airtight container. Here are a few guidelines for you to go by:

  • Lunchmeats in an open package last only about 3 to 5 days. Lunchmeats in a tightly sealed package can last up to 10 days.
  • A jar of mayonnaise lasts up to 2 months in the refrigerator. Fresh eggs in their shell will last up to 3 weeks.
  • A sealed package of bacon will last only 1 week in the refrigerator, but up to 1 month in the freezer.
  • Salads made with mayonnaise such as tuna, pasta or chicken salad last only 3 to 5 days in the refrigerator.
