More Lunch Bunch Meals

We heard you and we agree! A Lunch Bunch is a great way for you and your co-workers to spend some quality time with each other. You have also found that you have more free time during the workday and have been able to limit those fast food, high calorie lunches on the run. Whatever the reason, a Lunch Bunch is a terrific vehicle to come together, eat well, and enjoy some moments of pampering during the workweek. Good for you!! And we will keep our part of the bargain. Monday
Salad Nicoise with Grilled Tuna
Key Lime Squares

SETTING THE SCENE: Sunday's supper of fresh grilled tuna, steamed green beans and a fun fruit bar dessert becomes Monday's lunch bunch. Arrange the salad in the bottom of a baking dish. Cover well with plastic wrap. Bring a container of your favorite fresh vinaigrette dressing. Wrap four individual key lime bars with plastic wrap. Tie with curling ribbon. Serve the salad onto colorful paper plates. Drizzle the top with dressing. Serve with a napkin and utensils and the surprise dessert gift!


Tuesday
Greek Hero Sandwich
Oatmeal Cookies

SETTING THE SCENE: Line four small wicker baskets with checkered napkins. Cut the sandwich in two and wrap each one in plastic. Place the halves inside the basket. Wrap two cookies in plastic wrap. Place into the basket. Add a sturdy plate, plastic fork and colorful napkin - and maybe a bag of baked chips to each basket. When lunchtime comes, simply deliver the baskets to your Lunch Bunch pals.


Wednesday
Shrimp and Swiss Cheese Quiche with Dill
Cream of Mushroom Soup

SETTING THE SCENE: Use a thermos to bring the soup to work. Pour individual servings into hot capacity paper cups. Serve the shrimp quiche at room temperature. Place the soup cup on a large paper napkin on top of your Lunch Bunch pal's desk. Place a plate filled with a wedge of the creamy quiche next to the soup. Don't forget a spoon and fork!! Add a peppermint two for dessert!


Thursday
Chicken and Artichoke Pasta Salad
Chewy Butterscotch Raisin Bars

SETTING THE SCENE: You can make this large salad the night before for your family. Bring the extra salad to work in a covered bowl. Serve on individual plates with a butterscotch bar wrapped for dessert. Don't forget the napkin and fork and perhaps a fresh flower!
