Seared Tuna in Oriental Marinade


This tuna is so flavorful that you will serve it again and again. The recipe calls for the tuna to be cooked rare or medium rare. If this is not your preference, simply add more cooking time on each side. You can easily substitute chicken breasts or a flank steak for the tuna steaks is you wish.
4 6 ounces tuna steaks, about 1/2 inch thick ground pepper
1/2 cup rice wine vinegar
4 tablespoons soy sauce
2 tablespoons sugar
1 tablespoon sesame oil
1 garlic clove, minced
2 tablespoons green onions including tops, chopped
1 teaspoon fresh ginger, grated

4 tablespoons sesame seeds

1. Season the tuna steaks with freshly ground pepper.

2. Combine the marinade ingredients by whisking them together in a small bowl.

3. Place the steaks in a shallow dish and pour the marinade over all. Cover with plastic wrap, and chill for at least 30 minutes.

4. Warm the grill over high heat, and spray with a vegetable oil spray.

5. Remove the tuna from the marinade, reserving the mixture to make a sauce.

6. Sprinkle the sesame seeds on both sides of the tuna steaks.

7. Lay the steaks onto the grill and sear, being careful not to burn the sesame seeds.

8. Sear the tuna, turning once, about 2 - 4 minutes per side.

9. Remove the steaks to a platter, and keep warm.

10. Pour the reserved marinade into the pan. Cook for several minutes until the marinade reduces to a syrupy sauce.

To serve, slice the tuna steaks into strips and drizzle the sauce on top.
