Feel Good Chicken Soup


In the old world tradition this soup really does work for almost anything that needs fixing. It is guaranteed to remedy morning sickness, stuffy noses, sub-par report cards, broken hearts, skinned knees, and bad hair days. It must be made to share but saves well in the freezer for emergencies.
1 tablespoon olive oil
4 medium celery ribs, sliced, about 2 cups
4 large carrots, sliced, about 2 cups
2 medium onions, chopped, about 1 cup
4 garlic cloves, minced, about 2 tablespoons
3 quarts Chicken Stock with Roasted Vegetables (see recipe)
4 chicken breast halves with ribs, cooked, chopped into 1/2 inch pieces
2 tablespoons fresh dill weed, chopped
1/2 cup dry sherry
2 cups uncooked long-grain white rice
salt and freshly ground pepper

1. Cook the celery, carrots and onions in the olive oil in the bottom of a large pot until soft and beginning to brown.

2. Add the garlic and cook for 5 minutes.

3. Pour the chicken stock into the pot. Simmer for 20 to 30 minutes.

4. Add the cooked chicken pieces to the pot.

5. Add the dill, sherry and rice to the pot, cover and cook for 15 to 20 minutes more.

6. Season generously with salt and freshly ground pepper.

SETTING THE SCENE: Serve each bowl of soup with a huge smile and a great big bear hug.
